- Cilantro - 2 tablespoons, chopped
- Red chili flakes - 1 teaspoon (adjust to taste)
- Black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Avocado oil - 1 tablespoon for grilling
Steps
- In a mixing bowl, combine coconut aminos, fish sauce, lime juice, minced garlic, grated ginger, chopped cilantro, red chili flakes, black pepper, and salt to create the marinade.
- Add the chicken thighs to the marinade, ensuring they are thoroughly coated. Cover and refrigerate for at least 15 minutes, or up to 2 hours for more flavor.
- Preheat a grill or grill pan over medium-high heat and brush with avocado oil to prevent sticking.
- Remove the chicken from the marinade and let any excess marinade drip off. Discard the remaining marinade.
- Grill the chicken thighs for about 6-7 minutes on each side, or until they are cooked through and have nice grill marks.
- Once cooked, let the chicken rest for 5 minutes before slicing.
