  • Fish sauce - 1 tablespoon
  • Lime juice - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Cilantro - 2 tablespoons, chopped
  • Red chili flakes - 1 teaspoon (adjust to taste)
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Avocado oil - 1 tablespoon for grilling

Steps

  1. In a mixing bowl, combine coconut aminos, fish sauce, lime juice, minced garlic, grated ginger, chopped cilantro, red chili flakes, black pepper, and salt to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are thoroughly coated. Cover and refrigerate for at least 15 minutes, or up to 2 hours for more flavor.
  3. Preheat a grill or grill pan over medium-high heat and brush with avocado oil to prevent sticking.
  4. Remove the chicken from the marinade and let any excess marinade drip off. Discard the remaining marinade.
  5. Grill the chicken thighs for about 6-7 minutes on each side, or until they are cooked through and have nice grill marks.
  6. Once cooked, let the chicken rest for 5 minutes before slicing.
  7. Serve warm with a sprinkle of fresh cilantro on top.
