Ingredients

  • Green papaya - 200 grams, shredded
  • Cherry tomatoes - 100 grams, halved
  • Long green beans - 50 grams, cut into 2-inch pieces
  • Carrots - 50 grams, shredded
  • Fresh Thai basil - 10 grams, chopped
  • Fresh cilantro - 10 grams, chopped
  • Lime juice - 30 ml
  • Soy sauce - 15 ml
  • Agave syrup - 10 grams
  • Garlic - 1 clove, minced
  • Thai bird chili - 1, finely chopped
  • Peanuts - 20 grams, crushed

Steps

  1. In a large mixing bowl, combine the shredded green papaya, cherry tomatoes, green beans, and carrots.
  2. In a small bowl, whisk together the lime juice, soy sauce, agave syrup, minced garlic, and chopped Thai bird chili to create the dressing.
  3. Pour the dressing over the salad mixture and toss well to combine all the ingredients evenly.
  4. Add the chopped Thai basil and cilantro, and toss gently again.
  5. Top the salad with crushed peanuts before serving.
