Ingredients
- Chickpeas - 200 grams, drained and rinsed
- Fresh cilantro - 30 grams, chopped
- Green curry paste - 2 tablespoons
- Coconut flour - 30 grams
- Garlic - 2 cloves, minced
- Ginger - 1 tablespoon, grated
- Lime juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon (for frying)
- Whole wheat burger buns - 2
- Cucumber - 1/2, sliced
- Carrot - 1 small, grated
- Red onion - 1/4, thinly sliced
- Coconut yogurt - 4 tablespoons (for sauce)
- Sriracha - 1 teaspoon (optional, for spice)
Steps
- In a large mixing bowl, mash the chickpeas with a fork until mostly smooth, leaving some chunks for texture.
- Add chopped cilantro, green curry paste, coconut flour, minced garlic, grated ginger, lime juice, salt, and black pepper to the mashed chickpeas. Mix until well combined.
- Form the mixture into two patties, about 1.5 cm thick.
- Heat olive oil in a frying pan over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, prepare the toppings: slice the cucumber, grate the carrot, and thinly slice the red onion.
- To make the sauce, mix coconut yogurt with Sriracha (if using) in a small bowl.
- Once the patties are cooked, assemble the burgers by placing each patty on a burger bun and topping with cucumber, grated carrot, red onion, and a generous dollop of the coconut yogurt sauce.
- Serve immediately with additional lime wedges on the side.
