- Thai eggplant - 200 grams, sliced

- Coconut oil - 1 tablespoon
- Peanut butter - 2 tablespoons
- Soy sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped
- Chili flakes - 1 teaspoon
- Salt - to taste
- Vegan cheese - 100 grams (optional)
Steps
- Preheat the oven to 220°C (428°F).
- Roll out the whole wheat pizza dough on a floured surface to your desired thickness and shape.
- Transfer the rolled-out dough to a pizza stone or baking sheet lined with parchment paper.
- In a bowl, mix together the peanut butter, soy sauce, lime juice, and chili flakes to create the sauce.
- Brush the pizza dough lightly with coconut oil and spread the peanut sauce evenly over the base.
- Arrange the sliced Thai eggplant, red bell pepper, and red onion on top of the sauce.
