Ingredients
- sweet corn - 200 grams (fresh or canned)
- rice flour - 50 grams
- all-purpose flour - 30 grams
- green onions - 2 stalks, finely chopped
- cilantro - 2 tablespoons, chopped
- Thai red curry paste - 1 teaspoon
- lime juice - 1 tablespoon
- salt - 1/2 teaspoon
- water - 100 ml
- cooking oil - for frying
Steps
- In a mixing bowl, combine the sweet corn, rice flour, all-purpose flour, chopped green onions, chopped cilantro, Thai red curry paste, lime juice, and salt.
- Gradually add water to the mixture, stirring until a thick batter forms. The batter should hold together but not be too dry.
- Heat a non-stick skillet over medium heat and add enough cooking oil to coat the bottom.
- Once the oil is hot, spoon tablespoons of the batter into the skillet, flattening them slightly with the back of the spoon.
- Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove the fritters from the skillet and place them on paper towels to drain excess oil.
- Serve hot with a side of sweet chili sauce or lime wedges.
