Ingredients

  • sweet corn - 200 grams (fresh or canned)
  • rice flour - 50 grams
  • all-purpose flour - 30 grams
  • green onions - 2 stalks, finely chopped
  • cilantro - 2 tablespoons, chopped
  • Thai red curry paste - 1 teaspoon
  • lime juice - 1 tablespoon
  • salt - 1/2 teaspoon
  • water - 100 ml
  • cooking oil - for frying

Steps

  1. In a mixing bowl, combine the sweet corn, rice flour, all-purpose flour, chopped green onions, chopped cilantro, Thai red curry paste, lime juice, and salt.
  2. Gradually add water to the mixture, stirring until a thick batter forms. The batter should hold together but not be too dry.
  3. Heat a non-stick skillet over medium heat and add enough cooking oil to coat the bottom.
  4. Once the oil is hot, spoon tablespoons of the batter into the skillet, flattening them slightly with the back of the spoon.
  5. Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy.
  6. Remove the fritters from the skillet and place them on paper towels to drain excess oil.
  7. Serve hot with a side of sweet chili sauce or lime wedges.
