  • Fresh mango - 100 grams (for topping)
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. In a medium saucepan, combine coconut milk, rice flour, maple syrup, sugar, and a pinch of salt. Stir well until there are no lumps.
  2. Place the saucepan over medium heat and cook the mixture, stirring continuously, until it thickens and becomes a smooth pudding-like consistency (about 10-15 minutes).
  3. Once thickened, remove from heat and stir in the vanilla extract.
  4. Pour the pudding into two small serving bowls or cups and let it cool at room temperature for about 10 minutes.
