- Fresh mango - 100 grams (for topping)
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- In a medium saucepan, combine coconut milk, rice flour, maple syrup, sugar, and a pinch of salt. Stir well until there are no lumps.
- Place the saucepan over medium heat and cook the mixture, stirring continuously, until it thickens and becomes a smooth pudding-like consistency (about 10-15 minutes).
- Once thickened, remove from heat and stir in the vanilla extract.
- Pour the pudding into two small serving bowls or cups and let it cool at room temperature for about 10 minutes.
- Refrigerate the puddings for at least 15 minutes to set.
