- Fresh basil - 10 grams, chopped
- Cilantro - 10 grams, chopped

Steps
- Cook the spaghetti or rice noodles according to the package instructions. Drain and set aside.
- In a large pan, heat a splash of vegetable broth over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1-2 minutes.
- Add the red bell pepper, carrot, and snap peas to the pan, and cook for an additional 3-4 minutes until the vegetables are tender-crisp.
- Stir in the Thai red curry paste and cook for another minute to combine the flavors.
- Pour in the coconut milk and vegetable broth, and bring the mixture to a gentle simmer.
