Ingredients

  • Rice noodles - 200 grams
  • Vegetable oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Red chili - 1, finely sliced
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, sliced
  • Green onions - 2, chopped
  • Soy sauce - 3 tablespoons
  • Lime juice - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped
  • Peanuts - 30 grams, crushed
  • Salt - to taste

Steps

  1. Cook the rice noodles according to package instructions until al dente. Drain and set aside.
  2. In a large pan, heat the vegetable oil over medium heat. Add the minced garlic and sliced red chili, sautéing for about 1 minute until fragrant.
  3. Add the julienned carrot and sliced bell pepper to the pan and stir-fry for about 2-3 minutes until slightly tender.
  4. Add the cooked rice noodles to the pan, along with the soy sauce and lime juice. Toss everything together for another 2-3 minutes to heat through.
  5. Remove from heat and stir in the chopped green onions and cilantro. Adjust salt to taste.
  6. Serve the noodles topped with crushed peanuts.
