- Rice noodles - 200 grams
- Vegetable oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Red chili - 1, finely sliced
- Carrot - 1 medium, julienned
- Bell pepper - 1 medium, sliced
- Green onions - 2, chopped
- Soy sauce - 3 tablespoons
- Lime juice - 1 tablespoon
- Cilantro - 2 tablespoons, chopped
- Peanuts - 30 grams, crushed
- Salt - to taste
Steps
- Cook the rice noodles according to package instructions until al dente. Drain and set aside.
- In a large pan, heat the vegetable oil over medium heat. Add the minced garlic and sliced red chili, sautéing for about 1 minute until fragrant.
- Add the julienned carrot and sliced bell pepper to the pan and stir-fry for about 2-3 minutes until slightly tender.
- Add the cooked rice noodles to the pan, along with the soy sauce and lime juice. Toss everything together for another 2-3 minutes to heat through.
- Remove from heat and stir in the chopped green onions and cilantro. Adjust salt to taste.
- Serve the noodles topped with crushed peanuts.
