Ingredients

  • Red Thai chilies - 4 pieces
  • Garlic - 3 cloves
  • Shallot - 1 medium
  • Lime juice - 2 tablespoons
  • Coconut sugar - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Water - 2 tablespoons
  • Salt - to taste

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Place the red Thai chilies and garlic cloves on a baking tray and roast in the preheated oven for about 10 minutes, or until slightly charred.
  3. While the chilies and garlic are roasting, finely chop the shallot and cilantro.
  4. Once roasted, remove the chilies and garlic from the oven and let them cool slightly. Peel the garlic cloves.
  5. In a blender or food processor, combine the roasted chilies, garlic, chopped shallot, lime juice, coconut sugar, soy sauce, and water. Blend until smooth.
  6. Taste the dip and add salt as needed, blending again to combine.
  7. Transfer the dip to a serving bowl and stir in the chopped cilantro.
  8. Serve with fresh vegetables, rice crackers, or your choice of dipping items.
