- Red Thai chilies - 4 pieces
- Garlic - 3 cloves
- Shallot - 1 medium
- Lime juice - 2 tablespoons
- Coconut sugar - 1 tablespoon
- Soy sauce - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped
- Water - 2 tablespoons
- Salt - to taste
Steps
- Preheat your oven to 180°C (350°F).
- Place the red Thai chilies and garlic cloves on a baking tray and roast in the preheated oven for about 10 minutes, or until slightly charred.
- While the chilies and garlic are roasting, finely chop the shallot and cilantro.
- Once roasted, remove the chilies and garlic from the oven and let them cool slightly. Peel the garlic cloves.
- In a blender or food processor, combine the roasted chilies, garlic, chopped shallot, lime juice, coconut sugar, soy sauce, and water. Blend until smooth.
- Taste the dip and add salt as needed, blending again to combine.
- Transfer the dip to a serving bowl and stir in the chopped cilantro.
- Serve with fresh vegetables, rice crackers, or your choice of dipping items.
