- Lime juice - 1 tablespoon
- Soy sauce - 1 tablespoon
- Cornstarch - 2 tablespoons
- Sesame oil - 1 tablespoon

- Black pepper - 1/4 teaspoon
- Burger buns - 2 units, whole grain preferred
- Cucumber - 1 small, thinly sliced
- Carrot - 1 small, grated
- Fresh mint leaves - 10 grams, torn
- Peanut sauce - 2 tablespoons, for serving
Steps
- In a large mixing bowl, mash the cooked chickpeas with a fork until mostly smooth but still slightly chunky.
- Add the cooked brown rice, Thai red curry paste, chopped cilantro, minced garlic, chopped shallot, lime juice, soy sauce, cornstarch, salt, and black pepper to the bowl. Mix until thoroughly combined.
- Form the mixture into two equal-sized patties, pressing them firmly to hold together.
- Heat sesame oil in a non-stick skillet over medium heat. Once hot, carefully place the patties in the skillet and cook for about 4-5 minutes on each side, or until golden brown and heated through.
