Steps
- Cook the spaghetti according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the vegetable oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sliced chicken breast to the skillet, season with salt and pepper, and cook until no longer pink, about 5-7 minutes.
- Add the sliced red bell pepper, julienned carrot, and broccoli florets to the skillet. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
- In a small bowl, whisk together the soy sauce, peanut butter, coconut milk, and lime juice until smooth.
