  • Red bell pepper - 1, sliced
  • Carrot - 1, julienned
  • Broccoli florets - 100 grams
  • Soy sauce - 2 tablespoons
  • Peanut butter - 3 tablespoons
  • Coconut milk - 100 ml
  • Lime juice - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Crushed red pepper flakes - 1 teaspoon (optional)
  • Salt - to taste

Steps

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.

  3. Add the sliced chicken breast to the skillet, season with salt and pepper, and cook until no longer pink, about 5-7 minutes.
  4. Add the sliced red bell pepper, julienned carrot, and broccoli florets to the skillet. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
  5. In a small bowl, whisk together the soy sauce, peanut butter, coconut milk, and lime juice until smooth.
