  • Cooked chicken breast (shredded) - 200 g
  • Peanut butter (natural, unsweetened) - 2 tbsp
  • Coconut milk - 3 tbsp
  • Soy sauce (or tamari for gluten-free) - 1 tbsp
  • Lime juice - 1 tbsp
  • Red bell pepper (sliced) - 50 g
  • Green onion (sliced) - 2 stalks
  • Cilantro (chopped) - 2 tbsp
  • Crushed peanuts (for garnish) - 1 tbsp
  • Red pepper flakes (optional) - to taste

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a mixing bowl, combine almond flour, shredded mozzarella, cream cheese, egg, and baking powder. Mix until a dough forms.
  3. Roll out the dough between two sheets of parchment paper to form a pizza base, then transfer to a baking sheet.
  4. Bake the pizza base in the preheated oven for 10-12 minutes or until golden brown.

  6. Once the pizza base is done baking, spread the satay sauce evenly over the top.
