  • Corn on the cob - 1 ear, cut into 2 pieces
  • Olive oil - 2 tablespoons (30ml)
  • Soy sauce - 2 tablespoons (30ml)
  • Lime juice - 1 tablespoon (15ml)
  • Brown sugar - 1 tablespoon (15g)
  • Garlic - 2 cloves, minced
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, whisk together olive oil, soy sauce, lime juice, brown sugar, minced garlic, salt, and black pepper to create the marinade.
  2. Add the chopped bell peppers, zucchini, eggplant, mushrooms, red onion, and corn to the marinade, ensuring all vegetables are well coated. Let them marinate for at least 15 minutes.
