- Corn on the cob - 1 ear, cut into 2 pieces
- Olive oil - 2 tablespoons (30ml)
- Soy sauce - 2 tablespoons (30ml)
- Lime juice - 1 tablespoon (15ml)
- Brown sugar - 1 tablespoon (15g)
- Garlic - 2 cloves, minced
- Fresh cilantro - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a bowl, whisk together olive oil, soy sauce, lime juice, brown sugar, minced garlic, salt, and black pepper to create the marinade.
- Add the chopped bell peppers, zucchini, eggplant, mushrooms, red onion, and corn to the marinade, ensuring all vegetables are well coated. Let them marinate for at least 15 minutes.
- Preheat the grill to medium-high heat.
