- Spaghetti - 200 grams
- Thai basil leaves - 1 cup, packed
- Garlic - 3 cloves, minced
- Red bell pepper - 1 medium, sliced
- Carrot - 1 medium, julienned
- Green onion - 2 stalks, chopped
- Soy sauce - 3 tablespoons
- Lime juice - 1 tablespoon
- Coconut sugar - 1 teaspoon
- Sesame oil - 1 tablespoon
- Chili flakes - 1 teaspoon (optional)
- Salt - to taste
- Water - for boiling pasta
Steps
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sliced red bell pepper and julienned carrot to the skillet, and stir-fry for about 3-4 minutes until they begin to soften.
- Stir in the cooked spaghetti, soy sauce, lime juice, coconut sugar, and chili flakes (if using). Toss everything together for another 2-3 minutes until well combined and heated through.
- Remove the skillet from heat and fold in the Thai basil leaves and chopped green onions. Adjust salt to taste.
- Serve immediately, garnished with additional Thai basil if desired.
