- Rice noodles - 150 grams
- Vegetable oil - 2 tablespoons

- Red bell pepper, sliced - 1 medium
- Carrot, julienned - 1 medium
- Zucchini, sliced - 1 small
- Soy sauce - 3 tablespoons
- Oyster sauce (vegan) - 2 tablespoons
- Chili sauce - 1 tablespoon
- Fresh Thai basil leaves - 1 cup, packed
- Green onions, chopped - 2 stalks
- Lime wedges - 2 for serving
Steps
- Cook the rice noodles according to package instructions until al dente, then drain and set aside.
- In a large skillet or wok, heat vegetable oil over medium heat.
- Add minced garlic and sauté for about 30 seconds until fragrant.
- Add the sliced red bell pepper, julienned carrot, and sliced zucchini to the skillet. Stir-fry for 3-5 minutes until the vegetables are tender-crisp.
- Stir in the cooked rice noodles, soy sauce, oyster sauce, and chili sauce. Toss everything together until well combined.
- Add the fresh Thai basil leaves and chopped green onions, and stir-fry for an additional 1-2 minutes until the basil wilts.
- Remove from heat and serve immediately with lime wedges on the side.
