Ingredients

  • Rice noodles - 150 grams
  • Vegetable oil - 2 tablespoons
  • Garlic, minced - 3 cloves
  • Red bell pepper, sliced - 1 medium
  • Carrot, julienned - 1 medium
  • Zucchini, sliced - 1 small
  • Soy sauce - 3 tablespoons
  • Oyster sauce (vegan) - 2 tablespoons
  • Chili sauce - 1 tablespoon
  • Fresh Thai basil leaves - 1 cup, packed
  • Green onions, chopped - 2 stalks
  • Lime wedges - 2 for serving

Steps

  1. Cook the rice noodles according to package instructions until al dente, then drain and set aside.
  2. In a large skillet or wok, heat vegetable oil over medium heat.
  3. Add minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the sliced red bell pepper, julienned carrot, and sliced zucchini to the skillet. Stir-fry for 3-5 minutes until the vegetables are tender-crisp.
  5. Stir in the cooked rice noodles, soy sauce, oyster sauce, and chili sauce. Toss everything together until well combined.
  6. Add the fresh Thai basil leaves and chopped green onions, and stir-fry for an additional 1-2 minutes until the basil wilts.
  7. Remove from heat and serve immediately with lime wedges on the side.
