Ingredients

  • Canned black beans - 400 grams, drained and rinsed
  • Cooked quinoa - 100 grams
  • Thai basil leaves - 20 grams, chopped
  • Garlic - 2 cloves, minced
  • Red onion - 50 grams, finely chopped
  • Soy sauce - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Bread crumbs - 50 grams
  • Olive oil - 1 tablespoon (for cooking)
  • Whole wheat burger buns - 2
  • Cucumber - 50 grams, sliced
  • Tomato - 1 medium, sliced
  • Peanut butter - 2 tablespoons
  • Soy sauce - 1 tablespoon (for sauce)
  • Lime juice - 1 tablespoon
  • Water - 1 tablespoon

Steps

  1. In a mixing bowl, mash the black beans until mostly smooth, leaving some chunks for texture.
  2. Add cooked quinoa, chopped Thai basil, minced garlic, chopped red onion, soy sauce, ground cumin, chili powder, and bread crumbs to the bowl.
  3. Mix all the ingredients until well combined, then shape into 2 patties.
  4. Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and heated through.
  5. While the patties are cooking, prepare the peanut sauce by mixing peanut butter, soy sauce, lime juice, and water in a small bowl until smooth.
  6. Toast the whole wheat burger buns lightly on a grill or in a toaster.
  7. Assemble the burgers by placing the cooked patties on the bottom half of the buns, then topping with sliced cucumber, tomato, and a drizzle of the peanut sauce.
  8. Cover with the top half of the buns and serve immediately.
