- Canned black beans - 400 grams, drained and rinsed
- Cooked quinoa - 100 grams
- Thai basil leaves - 20 grams, chopped
- Garlic - 2 cloves, minced
- Red onion - 50 grams, finely chopped
- Soy sauce - 2 tablespoons
- Ground cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Bread crumbs - 50 grams
- Olive oil - 1 tablespoon (for cooking)
- Whole wheat burger buns - 2
- Cucumber - 50 grams, sliced
- Tomato - 1 medium, sliced
- Peanut butter - 2 tablespoons
- Soy sauce - 1 tablespoon (for sauce)
- Lime juice - 1 tablespoon
- Water - 1 tablespoon
Steps
- In a mixing bowl, mash the black beans until mostly smooth, leaving some chunks for texture.
- Add cooked quinoa, chopped Thai basil, minced garlic, chopped red onion, soy sauce, ground cumin, chili powder, and bread crumbs to the bowl.
- Mix all the ingredients until well combined, then shape into 2 patties.
- Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and heated through.
- While the patties are cooking, prepare the peanut sauce by mixing peanut butter, soy sauce, lime juice, and water in a small bowl until smooth.
- Toast the whole wheat burger buns lightly on a grill or in a toaster.
- Assemble the burgers by placing the cooked patties on the bottom half of the buns, then topping with sliced cucumber, tomato, and a drizzle of the peanut sauce.
- Cover with the top half of the buns and serve immediately.
