- Taro - 150 grams, peeled and diced
- Coconut milk - 200 ml
- Coconut sugar - 50 grams
- Cornstarch - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Salt - a pinch
- Water - 200 ml
Steps
- Steam the diced taro for about 15 minutes until soft, then let it cool slightly.
- In a blender, combine the steamed taro, coconut milk, coconut sugar, vanilla extract, and a pinch of salt. Blend until smooth.
- In a saucepan, mix the cornstarch with 200 ml of water to create a slurry. Heat over medium heat while stirring until it thickens.
- Gradually add the taro mixture to the thickened cornstarch mixture, stirring continuously until well combined and smooth.
- Pour the mixture into serving bowls or molds. Let it cool to room temperature, then refrigerate for at least 2 hours until set.
- Serve chilled, optionally garnished with toasted coconut flakes or fresh fruit.
