Ingredients

  • Tapioca pearls - 60 grams
  • Coconut milk - 400 ml
  • Palm sugar - 50 grams
  • Salt - a pinch
  • Vanilla extract - 1 teaspoon
  • Fresh mango - 1 medium, diced
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Rinse the tapioca pearls under cold water until the water runs clear, then drain.
  2. In a saucepan, combine the coconut milk, palm sugar, and a pinch of salt. Heat over medium heat until the sugar dissolves, stirring occasionally.
  3. Add the rinsed tapioca pearls to the saucepan. Cook on low heat, stirring frequently, for about 15-20 minutes or until the pearls become translucent and tender.
  4. Remove the saucepan from heat and stir in the vanilla extract. Allow the pudding to cool slightly.
  5. Divide the tapioca pudding into two serving bowls. Top each bowl with diced fresh mango and sprinkle with sesame seeds.
