- Tapioca pearls - 60 grams
- Coconut milk - 400 ml
- Palm sugar - 50 grams
- Salt - a pinch
- Vanilla extract - 1 teaspoon
- Fresh mango - 1 medium, diced
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- Rinse the tapioca pearls under cold water until the water runs clear, then drain.
- In a saucepan, combine the coconut milk, palm sugar, and a pinch of salt. Heat over medium heat until the sugar dissolves, stirring occasionally.
- Add the rinsed tapioca pearls to the saucepan. Cook on low heat, stirring frequently, for about 15-20 minutes or until the pearls become translucent and tender.
- Remove the saucepan from heat and stir in the vanilla extract. Allow the pudding to cool slightly.
- Divide the tapioca pudding into two serving bowls. Top each bowl with diced fresh mango and sprinkle with sesame seeds.
