- Pandan leaves (optional) - 1-2 leaves, knotted
Steps
- Rinse the tapioca pearls under cold water to remove excess starch and set aside.
- In a pot, bring 500 ml of water to a boil. Add the rinsed tapioca pearls and stir gently.
- Reduce heat to medium and cook the pearls for about 15-20 minutes, or until they become translucent, stirring occasionally.
- Once cooked, remove the pot from heat and let the pearls sit for an additional 5 minutes.
- In a separate saucepan, combine the coconut milk, sugar, salt, and knotted pandan leaves (if using). Heat over medium heat until the sugar dissolves, but do not let it boil.
- Remove the pandan leaves from the coconut milk mixture once the sugar is dissolved.
- Drain the cooked tapioca pearls and rinse them briefly under cold water to stop the cooking process.
- Combine the tapioca pearls with the coconut milk mixture in a serving bowl, and stir gently to combine.
- Serve warm or chilled, as desired.
