Ingredients

  • Tapioca pearls - 100 grams
  • Coconut milk - 200 ml
  • Water - 500 ml
  • Sugar - 2 tablespoons
  • Salt - a pinch
  • Pandan leaves (optional) - 1-2 leaves, knotted

Steps

  1. Rinse the tapioca pearls under cold water to remove excess starch and set aside.
  2. In a pot, bring 500 ml of water to a boil. Add the rinsed tapioca pearls and stir gently.
  3. Reduce heat to medium and cook the pearls for about 15-20 minutes, or until they become translucent, stirring occasionally.
  4. Once cooked, remove the pot from heat and let the pearls sit for an additional 5 minutes.
  5. In a separate saucepan, combine the coconut milk, sugar, salt, and knotted pandan leaves (if using). Heat over medium heat until the sugar dissolves, but do not let it boil.
  6. Remove the pandan leaves from the coconut milk mixture once the sugar is dissolved.
  7. Drain the cooked tapioca pearls and rinse them briefly under cold water to stop the cooking process.
  8. Combine the tapioca pearls with the coconut milk mixture in a serving bowl, and stir gently to combine.
  9. Serve warm or chilled, as desired.
