Ingredients
- Tapioca pearls - 100 grams
- Coconut milk - 200 ml
- Honey - 2 tablespoons
- Pandan leaves - 2 (or 1 teaspoon pandan extract)
- Water - 500 ml
- Salt - a pinch
Steps
- In a medium saucepan, bring 500 ml of water to a boil.
- Add the tapioca pearls to the boiling water and cook for about 15 minutes, stirring occasionally, until they become translucent.
- Once cooked, remove the tapioca pearls from heat and let them sit for 5 minutes in the water.
- In another saucepan, combine the coconut milk, honey, pandan leaves (or extract), and a pinch of salt over low heat, stirring until well mixed and warmed through. Do not boil.
- Drain the cooked tapioca pearls and rinse them under cold water to stop the cooking process.
- Add the drained tapioca pearls to the coconut milk mixture and stir gently to combine.
- Remove from heat and let it cool slightly before serving.
