- Tapioca pearls - 100 grams
- Coconut milk - 200 milliliters
- Water - 400 milliliters
- Sugar - 50 grams
- Salt - a pinch
- Grated fresh coconut (for garnish) - 30 grams
- Pandan leaves (optional) - 1 piece
Steps
- In a medium pot, bring 400 milliliters of water to a boil.
- Add the tapioca pearls to the boiling water and stir gently to prevent sticking.
- Cook the tapioca pearls for about 15-20 minutes, or until they become translucent and chewy. Stir occasionally.
- Once cooked, drain the tapioca pearls and rinse them under cold water to stop the cooking process.
- In another saucepan, combine coconut milk, sugar, and a pinch of salt. If using pandan leaves, tie them in a knot and add to the mixture.
- Heat the coconut milk mixture over low heat until the sugar dissolves, stirring occasionally. Do not let it boil.
- Remove the pandan leaves and keep the coconut milk warm.
- To serve, place a portion of the cooked tapioca pearls in a bowl, drizzle with warm coconut milk, and top with grated fresh coconut.
