Ingredients

  • Tapioca pearls - 100 grams
  • Coconut milk - 200 milliliters
  • Water - 400 milliliters
  • Sugar - 50 grams
  • Salt - a pinch
  • Grated fresh coconut (for garnish) - 30 grams
  • Pandan leaves (optional) - 1 piece

Steps

  1. In a medium pot, bring 400 milliliters of water to a boil.
  2. Add the tapioca pearls to the boiling water and stir gently to prevent sticking.
  3. Cook the tapioca pearls for about 15-20 minutes, or until they become translucent and chewy. Stir occasionally.
  4. Once cooked, drain the tapioca pearls and rinse them under cold water to stop the cooking process.
  5. In another saucepan, combine coconut milk, sugar, and a pinch of salt. If using pandan leaves, tie them in a knot and add to the mixture.
  6. Heat the coconut milk mixture over low heat until the sugar dissolves, stirring occasionally. Do not let it boil.
  7. Remove the pandan leaves and keep the coconut milk warm.
  8. To serve, place a portion of the cooked tapioca pearls in a bowl, drizzle with warm coconut milk, and top with grated fresh coconut.
