  • Maple syrup - 2 tablespoons (30ml)
  • Rice vinegar - 1 tablespoon (15ml)
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, grated
  • Sesame oil - 1 teaspoon (5ml)
  • Chili flakes - 1/2 teaspoon (optional)
  • Sesame seeds - 1 tablespoon (for garnish)
  • Fresh cilantro - a handful, chopped (for garnish)

Steps

  1. Preheat your grill or grill pan over medium-high heat.
  2. Slice the Japanese eggplants in half lengthwise and score the flesh in a diamond pattern.
  3. In a bowl, whisk together soy sauce, maple syrup, rice vinegar, minced garlic, grated ginger, sesame oil, and chili flakes if using.
  4. Brush the eggplant halves with the sauce mixture generously, saving some for basting while grilling.
  5. Place the eggplants on the grill, cut side down, and cook for about 5-7 minutes until they are nicely charred.
  6. Flip the eggplants over, baste with the remaining sauce, and grill for another 5-7 minutes until tender.
