Ingredients

  • Sweet potato - 250 grams
  • Chickpeas (canned, drained) - 100 grams
  • Red onion (finely chopped) - 30 grams
  • Garlic (minced) - 2 cloves
  • Thai green beans (cut into small pieces) - 50 grams
  • Fresh cilantro (chopped) - 15 grams
  • Lime juice - 1 tablespoon
  • Fish sauce (or vegan alternative) - 1 teaspoon
  • Chili flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Breadcrumbs - 50 grams
  • Burger buns - 2
  • Lettuce leaves - 2
  • Sliced cucumber - 50 grams
  • Peanut sauce (for drizzling) - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and cube the sweet potato, then toss it with a little olive oil, salt, and pepper. Spread it on a baking sheet and roast for 20-25 minutes until tender.
  3. In a bowl, mash the roasted sweet potato and chickpeas together until mostly smooth.
  4. Add the chopped red onion, minced garlic, green beans, cilantro, lime juice, fish sauce, chili flakes, salt, and pepper to the mashed mixture. Mix well.
  5. Gradually add breadcrumbs to the mixture until it holds together but is not too dry.
  6. Form the mixture into 2 burger patties.
  7. Heat a non-stick skillet over medium heat and lightly grease it. Cook the patties for about 4-5 minutes on each side until golden brown.
  8. Toast the burger buns in the skillet for 1-2 minutes until lightly browned.
  9. Assemble the burgers by placing a lettuce leaf on each bun, followed by the sweet potato patty, sliced cucumber, and a drizzle of peanut sauce.
