Ingredients

  • 200g sweet potato - peeled and chopped
  • 50g cooked quinoa
  • 1/4 cup breadcrumbs
  • 1/4 cup grated carrot
  • 1 clove garlic - minced
  • 1 tsp fresh ginger - grated
  • 1 tbsp soy sauce
  • 1 tsp lime juice
  • 1/2 tsp red curry paste
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp vegetable oil - for frying
  • 2 whole wheat burger buns
  • 2 lettuce leaves
  • 2 slices of tomato
  • 1/4 avocado - sliced
  • Fresh cilantro - for garnish

Steps

  1. Boil the sweet potato in a pot of salted water for about 15 minutes or until tender. Drain and let cool slightly.
  2. In a mixing bowl, mash the sweet potato until smooth. Add cooked quinoa, breadcrumbs, grated carrot, minced garlic, grated ginger, soy sauce, lime juice, red curry paste, salt, and black pepper. Mix well until combined.
  3. Form the mixture into 2 equal patties.
  4. Heat vegetable oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown.
  5. Toast the whole wheat burger buns in the same skillet for a minute until lightly browned.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the sweet potato patty, a slice of tomato, avocado slices, and fresh cilantro. Top with the other half of the bun.
  7. Serve immediately with your favorite dipping sauce or side.
