- Desiccated coconut - 30 grams (for coating)
- Cooking oil - for frying
Steps
- Peel and chop the sweet potatoes into small pieces. Steam them until tender, about 15 minutes.
- In a mixing bowl, mash the steamed sweet potatoes until smooth.
- Add the rice flour, tapioca starch, coconut milk, maple syrup, and a pinch of salt to the mashed sweet potatoes. Mix until a dough forms.
- Shape the mixture into small balls, about the size of a tablespoon.
- Roll each ball in desiccated coconut to coat them evenly.
- In a frying pan, heat enough cooking oil over medium heat to cover the bottom. Fry the sweet potato balls in batches until golden brown, about 3-4 minutes per side.
- Remove the balls and place them on a paper towel to drain excess oil. Serve warm.
