Ingredients

  • Rice flour - 50 grams
  • Coconut milk - 50 ml
  • Maple syrup - 2 tablespoons
  • Tapioca starch - 20 grams
  • Salt - a pinch
  • Desiccated coconut - 30 grams (for coating)
  • Cooking oil - for frying

Steps

  1. Peel and chop the sweet potatoes into small pieces. Steam them until tender, about 15 minutes.
  2. In a mixing bowl, mash the steamed sweet potatoes until smooth.
  3. Add the rice flour, tapioca starch, coconut milk, maple syrup, and a pinch of salt to the mashed sweet potatoes. Mix until a dough forms.
  4. Shape the mixture into small balls, about the size of a tablespoon.
  5. Roll each ball in desiccated coconut to coat them evenly.
  6. In a frying pan, heat enough cooking oil over medium heat to cover the bottom. Fry the sweet potato balls in batches until golden brown, about 3-4 minutes per side.
  7. Remove the balls and place them on a paper towel to drain excess oil. Serve warm.
