- Rice noodles - 200 grams
- Vegetable oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Shallots - 2, thinly sliced
- Carrot - 1 medium, julienned
- Red bell pepper - 1 medium, thinly sliced
- Green beans - 100 grams, trimmed and halved
- Tofu - 150 grams, firm, diced
- Tamarind paste - 2 tablespoons
- Soy sauce - 2 tablespoons
- Sugar - 1 tablespoon
- Lime juice - 1 tablespoon
- Chili flakes - 1 teaspoon (adjust to taste)
- Chopped peanuts - 50 grams, for garnish
- Fresh cilantro - 2 tablespoons, chopped
- Lime wedges - for serving
Steps
- Soak the rice noodles in warm water for about 15 minutes or until softened, then drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and sliced shallots, sautéing until fragrant, about 2 minutes.
- Add the diced tofu to the pan, cook until golden brown on all sides, approximately 5-7 minutes.
- Stir in the julienned carrot, sliced red bell pepper, and green beans. Cook for an additional 5 minutes, stirring frequently until the vegetables are tender.
- Add the soaked rice noodles to the pan along with the tamarind paste, soy sauce, sugar, lime juice, and chili flakes. Toss everything together until the noodles are well coated and heated through, about 3-4 minutes.
- Remove from heat and serve hot, garnished with chopped peanuts, fresh cilantro, and lime wedges on the side.
