Ingredients

  • Glutinous rice - 150 grams
  • Coconut milk - 200 ml
  • Sugar - 50 grams
  • Salt - 1/4 teaspoon
  • Ripe mango - 1 medium (about 200 grams)
  • Sesame seeds (optional) - 1 tablespoon

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. Drain the soaked rice and steam it in a bamboo or metal steamer for about 20-25 minutes until the grains are tender and sticky.
  3. While the rice steams, combine the coconut milk, sugar, and salt in a saucepan over medium heat. Stir until the sugar dissolves, but do not let it boil.
  4. Once the rice is cooked, transfer it to a mixing bowl and pour about 150 ml of the coconut milk mixture over the hot rice. Stir to combine and let it sit for about 10-15 minutes to absorb the flavors.
  5. Peel and slice the ripe mango into thin strips or wedges.
  6. To serve, place a portion of the sticky rice on a plate, top with mango slices, and drizzle with the remaining coconut milk mixture. Sprinkle sesame seeds on top if desired.
