Ingredients

  • Rice noodles - 200 grams
  • Sriracha sauce - 3 tablespoons
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Bell pepper - 1 medium, thinly sliced
  • Carrot - 1 medium, julienned
  • Green onions - 2, chopped
  • Cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Peanuts - 30 grams, crushed (optional)
  • Water - 1 liter

Steps

  1. Bring 1 liter of water to a boil in a large pot. Add the rice noodles and cook according to package instructions until al dente, usually about 4-6 minutes. Drain and rinse under cold water.
  2. In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  3. Add the sliced bell pepper and julienned carrot to the skillet, cooking for another 3-4 minutes until they begin to soften.
  4. Stir in the cooked rice noodles, Sriracha sauce, soy sauce, and lime juice. Toss everything together to ensure the noodles are well coated with the sauce, cooking for an additional 2-3 minutes.
  5. Remove from heat and stir in the chopped green onions and cilantro. If desired, top with crushed peanuts for added texture.
  6. Serve immediately, garnished with extra cilantro and lime wedges if desired.
