Ingredients
- Rice noodles - 200 grams
- Sriracha sauce - 3 tablespoons
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 tablespoon, grated
- Bell pepper - 1 medium, thinly sliced
- Carrot - 1 medium, julienned
- Green onions - 2, chopped
- Cilantro - 2 tablespoons, chopped
- Lime juice - 1 tablespoon
- Peanuts - 30 grams, crushed (optional)
- Water - 1 liter
Steps
- Bring 1 liter of water to a boil in a large pot. Add the rice noodles and cook according to package instructions until al dente, usually about 4-6 minutes. Drain and rinse under cold water.
- In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add the sliced bell pepper and julienned carrot to the skillet, cooking for another 3-4 minutes until they begin to soften.
- Stir in the cooked rice noodles, Sriracha sauce, soy sauce, and lime juice. Toss everything together to ensure the noodles are well coated with the sauce, cooking for an additional 2-3 minutes.
- Remove from heat and stir in the chopped green onions and cilantro. If desired, top with crushed peanuts for added texture.
- Serve immediately, garnished with extra cilantro and lime wedges if desired.
