- 1 ripe avocado - 1
- Sriracha sauce - 2 tablespoons
- Soy sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Garlic powder - 1 teaspoon
- Chickpeas (cooked) - 1 cup
- Rolled oats - 1/2 cup
- Fresh cilantro, chopped - 2 tablespoons
- Salt - 1/2 teaspoon
- Ground black pepper - 1/4 teaspoon
- Whole grain burger buns - 2
- Lettuce leaves - 2
- Tomato slices - 1 medium
- Cucumber slices - 1/2 medium
Steps
- In a mixing bowl, mash the ripe avocado with the Sriracha, soy sauce, lime juice, and garlic powder until smooth.
- In another bowl, combine the cooked chickpeas and rolled oats. Mash them together until mostly smooth but still slightly chunky.
- Add the avocado mixture to the chickpeas and oats, then stir in the chopped cilantro, salt, and black pepper until well combined.
- Form the mixture into two burger patties.
- Heat a non-stick pan over medium heat and lightly grease it with a little oil. Cook the patties for about 4-5 minutes on each side until golden brown.
- While the patties are cooking, toast the whole grain burger buns until lightly crispy.
- Assemble the burgers by placing a lettuce leaf on each bun, followed by the cooked patty, tomato slices, and cucumber slices. Top with additional Sriracha if desired.
