Ingredients

  • Rice paper wrappers - 4 sheets

  • Fresh mint leaves - 15 grams, chopped
  • Lettuce leaves - 2 large, torn into pieces
  • Avocado - 1 medium, sliced
  • Soy sauce (kosher) - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Honey - 1 teaspoon

Steps

  1. Prepare all vegetables by washing, peeling, and cutting them into julienne strips or slices.
  2. In a small bowl, mix together soy sauce, rice vinegar, sesame oil, and honey to create the dipping sauce. Set aside.
  3. Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it becomes soft and pliable.
  4. Lay the softened rice paper on a clean surface or cutting board. In the center, place a few pieces of lettuce, followed by a small amount of carrot, cucumber, red bell pepper, avocado, cilantro, and mint.
  5. Fold the sides of the rice paper over the filling, then roll it up tightly from the bottom to the top, ensuring the filling is secure. Repeat this process for the remaining wrappers and filling.
  6. Serve the spring rolls on a plate with the dipping sauce on the side. Enjoy fresh!
