Ingredients

  • Chickpeas - 200 grams, cooked
  • Carrot - 1 medium, grated
  • Red bell pepper - 1 small, finely chopped
  • Green onion - 2, finely chopped
  • Cilantro - 30 grams, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Thai red curry paste - 1 tablespoon
  • Oats - 50 grams, rolled
  • Soy sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Whole grain burger buns - 2
  • Cucumber - 1/2, sliced
  • Lettuce leaves - 2
  • Peanut butter - 1 tablespoon
  • Water - 1 tablespoon

Steps

  1. In a mixing bowl, mash the cooked chickpeas with a fork until mostly smooth but still chunky.
  2. Add the grated carrot, chopped red bell pepper, green onion, cilantro, minced garlic, grated ginger, Thai red curry paste, rolled oats, soy sauce, lime juice, salt, and black pepper to the mashed chickpeas. Mix until well combined.
  3. Form the mixture into two patties. If the mixture is too wet, add a bit more oats.
  4. Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  5. While the patties are cooking, prepare the peanut sauce by mixing peanut butter and water until smooth. Adjust the consistency with more water if necessary.
  6. To assemble, place a lettuce leaf on each burger bun, add the cooked veggie patty, top with cucumber slices, and drizzle with the peanut sauce. Close the buns and serve.
