- Firm tofu - 200 grams
- Soy sauce - 2 tablespoons
- Lime juice - 2 tablespoons
- Chili paste (Nam Prik Pao) - 1 tablespoon
- Garlic - 2 cloves, minced
- Red bell pepper - 1 medium, sliced
- Cucumber - 1 medium, diced
- Carrot - 1 medium, julienned
- Fresh cilantro - 1/4 cup, chopped
- Peanut butter - 1 tablespoon
- Sesame oil - 1 tablespoon
- Mixed salad greens - 100 grams
- Salt - to taste
- Black pepper - to taste
Steps
- Press the tofu to remove excess moisture for about 15 minutes, then cut it into cubes.
- In a bowl, mix soy sauce, lime juice, chili paste, minced garlic, peanut butter, and sesame oil to create the dressing.
- Heat a non-stick pan over medium heat and add a splash of oil. Once hot, sauté the tofu cubes until golden brown on all sides, about 10 minutes.
- In a large mixing bowl, combine the red bell pepper, cucumber, carrot, and fresh cilantro.
- Add the cooked tofu to the vegetables and pour the dressing over the salad. Toss gently to coat all ingredients evenly.
- Serve the salad over a bed of mixed salad greens, garnishing with additional cilantro if desired.
