Ingredients

  • Firm tofu - 200 grams
  • Soy sauce - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Chili paste (Nam Prik Pao) - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, sliced
  • Cucumber - 1 medium, diced
  • Carrot - 1 medium, julienned
  • Fresh cilantro - 1/4 cup, chopped
  • Peanut butter - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Mixed salad greens - 100 grams
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Press the tofu to remove excess moisture for about 15 minutes, then cut it into cubes.
  2. In a bowl, mix soy sauce, lime juice, chili paste, minced garlic, peanut butter, and sesame oil to create the dressing.
  3. Heat a non-stick pan over medium heat and add a splash of oil. Once hot, sauté the tofu cubes until golden brown on all sides, about 10 minutes.
  4. In a large mixing bowl, combine the red bell pepper, cucumber, carrot, and fresh cilantro.
  5. Add the cooked tofu to the vegetables and pour the dressing over the salad. Toss gently to coat all ingredients evenly.
  6. Serve the salad over a bed of mixed salad greens, garnishing with additional cilantro if desired.
