- Firm tofu - 400 grams
- Cornstarch - 2 tablespoons
- Thai red curry paste - 1 tablespoon
- Soy sauce - 1 tablespoon
- Fresh lime juice - 1 tablespoon
- Garlic - 2 cloves, minced
- Fresh ginger - 1 teaspoon, grated
- Cilantro - 2 tablespoons, chopped
- Vegetable oil - 2 tablespoons (for frying)
- Burger buns - 2 pieces
- Lettuce leaves - 2 pieces
- Cucumber - 1 small, sliced
- Tomato - 1 small, sliced
- Vegan mayonnaise - 2 tablespoons
- Sriracha sauce - 1 tablespoon (optional)
Steps
- Press the tofu for about 15 minutes to remove excess moisture, then cut it into 2 equal-sized slabs.
- In a bowl, combine the cornstarch, Thai red curry paste, soy sauce, lime juice, minced garlic, grated ginger, and chopped cilantro to make a marinade.
- Coat each tofu slab with the marinade and let it sit for 10 minutes to absorb the flavors.
- Heat vegetable oil in a non-stick skillet over medium heat. Once hot, carefully place the marinated tofu slabs in the skillet.
- Fry the tofu for about 4-5 minutes on each side until golden brown and crispy.
- While the tofu is cooking, prepare the burger buns by toasting them lightly on a separate skillet or in a toaster.
- Assemble the burgers by spreading vegan mayonnaise on the bottom half of each bun, followed by a lettuce leaf, the crispy tofu patty, cucumber slices, tomato slices, and a drizzle of sriracha sauce if desired.
- Top with the other half of the bun and serve immediately with your choice of side.
