Ingredients

  • Firm tofu - 400 grams
  • Cornstarch - 2 tablespoons
  • Thai red curry paste - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Fresh lime juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, grated
  • Cilantro - 2 tablespoons, chopped
  • Vegetable oil - 2 tablespoons (for frying)
  • Burger buns - 2 pieces
  • Lettuce leaves - 2 pieces
  • Cucumber - 1 small, sliced
  • Tomato - 1 small, sliced
  • Vegan mayonnaise - 2 tablespoons
  • Sriracha sauce - 1 tablespoon (optional)

Steps

  1. Press the tofu for about 15 minutes to remove excess moisture, then cut it into 2 equal-sized slabs.
  2. In a bowl, combine the cornstarch, Thai red curry paste, soy sauce, lime juice, minced garlic, grated ginger, and chopped cilantro to make a marinade.
  3. Coat each tofu slab with the marinade and let it sit for 10 minutes to absorb the flavors.
  4. Heat vegetable oil in a non-stick skillet over medium heat. Once hot, carefully place the marinated tofu slabs in the skillet.
  5. Fry the tofu for about 4-5 minutes on each side until golden brown and crispy.
  6. While the tofu is cooking, prepare the burger buns by toasting them lightly on a separate skillet or in a toaster.
  7. Assemble the burgers by spreading vegan mayonnaise on the bottom half of each bun, followed by a lettuce leaf, the crispy tofu patty, cucumber slices, tomato slices, and a drizzle of sriracha sauce if desired.
  8. Top with the other half of the bun and serve immediately with your choice of side.
