Ingredients

  • Green beans - 100 grams, trimmed and cut into 2 cm pieces
  • Red bell pepper - 1 medium, diced
  • Carrot - 1 medium, julienned
  • Cucumber - 1 small, diced
  • Chickpeas - 200 grams, canned, rinsed and drained
  • Fresh cilantro - 30 grams, chopped
  • Red chili - 1 small, finely chopped (adjust to taste)
  • Lime juice - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Maple syrup - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a pot of boiling water, blanch the green beans for 2-3 minutes until tender-crisp, then drain and rinse under cold water to stop the cooking process.
  2. In a large mixing bowl, combine the blanched green beans, diced red bell pepper, julienned carrot, diced cucumber, and rinsed chickpeas.
  3. In a separate small bowl, whisk together the lime juice, soy sauce, maple syrup, sesame oil, finely chopped red chili, salt, and black pepper to create the dressing.
  4. Pour the dressing over the salad mixture and toss gently to combine all ingredients evenly.
