Ingredients

  • Cauliflower - 1 medium head (about 600g)
  • Tamarind paste - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Fresh lime juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Red chili flakes - 1 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Ground coriander - 1/2 teaspoon
  • Vegetable oil - 2 tablespoons
  • Fresh cilantro - for garnish
  • Salt - to taste

Steps

  1. Preheat the grill to medium-high heat.
  2. Remove the leaves and stem from the cauliflower, then cut it into thick steaks (about 2.5 cm each).
  3. In a bowl, mix tamarind paste, soy sauce, brown sugar, lime juice, minced garlic, red chili flakes, ground cumin, ground coriander, vegetable oil, and salt to create a marinade.
  4. Brush the cauliflower steaks generously with the marinade on both sides and let them sit for 10-15 minutes to absorb the flavors.
  5. Once the grill is hot, place the marinated cauliflower steaks on it and cook for about 5-7 minutes on each side until they are tender and have nice grill marks.
  6. Remove from the grill and let them rest for a couple of minutes before serving.
  7. Garnish with fresh cilantro and serve with lime wedges if desired.
