Ingredients
- Cauliflower - 300 grams (for crust)
- Mozzarella cheese - 150 grams
- Parmesan cheese - 50 grams
- Egg - 1 large
- Garlic powder - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Shrimp, peeled and deveined - 200 grams
- Thai red curry paste - 1 tablespoon
- Coconut milk - 50 ml
- Bell pepper, sliced - 1/2 medium
- Red onion, thinly sliced - 1/4 medium
- Fresh cilantro, chopped - 2 tablespoons
- Lime juice - 1 tablespoon
- Chili flakes - 1/2 teaspoon
Steps
- Preheat the oven to 220°C (425°F).
- Rice the cauliflower by pulsing it in a food processor until it resembles fine grains. Steam the riced cauliflower for about 5 minutes and then let it cool.
- Once cooled, place the steamed cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
- In a bowl, mix the riced cauliflower, 100 grams of mozzarella cheese, parmesan cheese, egg, garlic powder, oregano, and salt until well combined.
- Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a pizza crust. Bake for 15-20 minutes until golden and firm.
- While the crust is baking, prepare the spicy shrimp. In a pan over medium heat, combine shrimp, Thai red curry paste, coconut milk, and chili flakes. Cook until the shrimp are pink and cooked through, about 5 minutes.
- Remove the pizza crust from the oven and top it with the shrimp mixture, bell pepper, red onion, and the remaining mozzarella cheese.
- Return the pizza to the oven and bake for an additional 10 minutes until the cheese is bubbly and golden.
- Remove from the oven, drizzle with lime juice, and garnish with fresh cilantro. Slice and serve hot.
