Ingredients

  • Cauliflower - 300 grams (for crust)
  • Mozzarella cheese - 150 grams
  • Parmesan cheese - 50 grams
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Shrimp, peeled and deveined - 200 grams
  • Thai red curry paste - 1 tablespoon
  • Coconut milk - 50 ml
  • Bell pepper, sliced - 1/2 medium
  • Red onion, thinly sliced - 1/4 medium
  • Fresh cilantro, chopped - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Chili flakes - 1/2 teaspoon

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Rice the cauliflower by pulsing it in a food processor until it resembles fine grains. Steam the riced cauliflower for about 5 minutes and then let it cool.
  3. Once cooled, place the steamed cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
  4. In a bowl, mix the riced cauliflower, 100 grams of mozzarella cheese, parmesan cheese, egg, garlic powder, oregano, and salt until well combined.
  5. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a pizza crust. Bake for 15-20 minutes until golden and firm.
  6. While the crust is baking, prepare the spicy shrimp. In a pan over medium heat, combine shrimp, Thai red curry paste, coconut milk, and chili flakes. Cook until the shrimp are pink and cooked through, about 5 minutes.
  7. Remove the pizza crust from the oven and top it with the shrimp mixture, bell pepper, red onion, and the remaining mozzarella cheese.
  8. Return the pizza to the oven and bake for an additional 10 minutes until the cheese is bubbly and golden.
  9. Remove from the oven, drizzle with lime juice, and garnish with fresh cilantro. Slice and serve hot.
