Ingredients

  • shrimp, peeled and deveined - 200 grams
  • garlic, minced - 2 cloves
  • red chili, minced - 1
  • fresh cilantro, chopped - 2 tablespoons
  • lime juice - 1 tablespoon
  • fish sauce - 1 teaspoon
  • egg - 1
  • whole wheat breadcrumbs - 50 grams
  • whole grain burger buns - 2
  • cabbage, shredded - 50 grams
  • carrot, grated - 1 small
  • mayonnaise - 2 tablespoons
  • lime zest - 1 teaspoon
  • salt - to taste
  • pepper - to taste
  • olive oil - for cooking

Steps

  1. In a food processor, blend the shrimp, garlic, red chili, cilantro, lime juice, fish sauce, egg, breadcrumbs, salt, and pepper until well combined but still slightly chunky.
  2. Form the mixture into two burger patties and refrigerate for 10 minutes to firm up.
  3. While the patties chill, prepare the slaw by mixing the shredded cabbage, grated carrot, mayonnaise, lime zest, salt, and pepper in a bowl. Set aside.
  4. Heat olive oil in a non-stick skillet over medium heat and cook the shrimp patties for about 4-5 minutes per side until golden and cooked through.
  5. Toast the whole grain burger buns lightly on the skillet.
  6. Assemble the burgers by placing a shrimp patty on each bun, topping with the lime-cilantro slaw, and closing with the other half of the bun.
