- Whole wheat pizza base - 1 (30 cm)
- Shrimp, peeled and deveined - 100 grams
- Squid, cleaned and sliced - 100 grams
- Red bell pepper, thinly sliced - 1/2
- Green onions, chopped - 2 stalks
- Thai red curry paste - 2 tablespoons
- Coconut milk - 100 ml
- Mozzarella cheese, shredded - 100 grams
- Fresh cilantro, chopped - 2 tablespoons
- Lime juice - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Crushed red pepper flakes - 1 teaspoon (optional)
Steps
- Preheat the oven to 220°C (425°F).
- In a skillet, heat olive oil over medium heat and add the shrimp and squid. Cook for about 3-4 minutes until they turn opaque.
- Stir in the red bell pepper, green onions, and Thai red curry paste, cooking for another 2 minutes until the vegetables soften.
- Add the coconut milk and simmer for 2-3 minutes until slightly thickened. Season with salt and lime juice to taste.
- Spread the seafood mixture evenly over the pizza base.
- Sprinkle shredded mozzarella cheese on top of the seafood mixture.
- Bake the pizza in the preheated oven for 12-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with fresh cilantro and crushed red pepper flakes, if using.
- Slice and serve hot.
