Ingredients

  • Chicken breast - 250 grams
  • Garlic - 2 cloves, minced

  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Coriander leaves - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Papaya - 150 grams, shredded
  • Carrot - 50 grams, shredded
  • Cabbage - 50 grams, shredded
  • Rice vinegar - 1 tablespoon
  • Honey - 1 teaspoon
  • Whole wheat burger buns - 2
  • Olive oil - 1 tablespoon

Steps

  1. In a bowl, combine ground chicken, minced garlic, grated ginger, chopped red chili, fish sauce, lime juice, coriander leaves, salt, and black pepper. Mix thoroughly until well combined.
  2. Form the mixture into two patties and set aside.
  3. In another bowl, mix shredded papaya, carrot, cabbage, rice vinegar, and honey to create the slaw. Toss well and set aside to marinate for 10 minutes.
  4. Heat olive oil in a skillet over medium heat. Cook the chicken patties for about 5-6 minutes per side or until they are cooked through and golden brown.
  5. While the patties are cooking, lightly toast the burger buns in a separate pan until golden.
  6. Assemble the burgers by placing a chicken patty on each bun, topping with the papaya slaw, and closing with the other half of the bun.
  7. Serve immediately with a lime wedge on the side.
