Ingredients
- Zucchini - 2 medium (about 300g)
- Olive oil - 2 tablespoons (30ml)
- Soy sauce - 1 tablespoon (15ml)
- Lime juice - 1 tablespoon (15ml)
- Brown sugar - 1 teaspoon (4g)
- Chili paste (Nam Prik Pao) - 1 tablespoon (15g)
- Garlic - 2 cloves, minced
- Fresh cilantro - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the grill to medium-high heat.
- Wash the zucchinis and slice them into 1cm thick rounds.
- In a bowl, mix together the olive oil, soy sauce, lime juice, brown sugar, chili paste, minced garlic, salt, and black pepper to create the marinade.
- Add the zucchini slices to the marinade and toss until they are evenly coated. Let it marinate for at least 10 minutes.
- Place the marinated zucchini slices on the grill and cook for about 3-4 minutes on each side, or until they are tender and have nice grill marks.
- Once grilled, remove from heat and sprinkle with fresh cilantro before serving.
