Ingredients

  • Zucchini - 2 medium (about 300g)
  • Olive oil - 2 tablespoons (30ml)
  • Soy sauce - 1 tablespoon (15ml)
  • Lime juice - 1 tablespoon (15ml)
  • Brown sugar - 1 teaspoon (4g)
  • Chili paste (Nam Prik Pao) - 1 tablespoon (15g)
  • Garlic - 2 cloves, minced
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the grill to medium-high heat.
  2. Wash the zucchinis and slice them into 1cm thick rounds.
  3. In a bowl, mix together the olive oil, soy sauce, lime juice, brown sugar, chili paste, minced garlic, salt, and black pepper to create the marinade.
  4. Add the zucchini slices to the marinade and toss until they are evenly coated. Let it marinate for at least 10 minutes.
  5. Place the marinated zucchini slices on the grill and cook for about 3-4 minutes on each side, or until they are tender and have nice grill marks.
  6. Once grilled, remove from heat and sprinkle with fresh cilantro before serving.
