Ingredients

  • Fresh corn on the cob - 2 ears
  • Coconut milk - 60 ml
  • Thai red curry paste - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Brown sugar - 1 teaspoon
  • Garlic - 1 clove, minced
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Red chili flakes - 1 teaspoon (adjust to taste)
  • Lime wedges - for serving

Steps

  1. Preheat your grill to medium-high heat.
  2. In a bowl, mix the coconut milk, Thai red curry paste, lime juice, brown sugar, minced garlic, salt, and red chili flakes to create a marinade.
  3. Husk the corn and soak it in water for about 10 minutes to prevent burning on the grill.
  4. Remove the corn from the water and pat dry, then brush the marinade generously over the corn, ensuring it's well-coated.
  5. Place the corn on the grill and cook for about 10-15 minutes, turning occasionally, until the corn is tender and has charred marks.
  6. Once cooked, remove the corn from the grill and sprinkle with chopped cilantro.
  7. Serve hot with lime wedges on the side for extra zing.
