  • Bell pepper - 1, thinly sliced
  • Carrot - 1, julienned
  • Zucchini - 1, thinly sliced
  • Soy sauce - 3 tablespoons
  • Lime juice - 1 tablespoon
  • Fresh basil leaves - 1 cup, packed
  • Peanuts - 2 tablespoons, chopped (for garnish)
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Cook the rice noodles according to package instructions until al dente, then drain and set aside.
  2. In a large skillet or wok, heat the coconut oil over medium heat.
  3. Add minced garlic and sliced red chili to the skillet, sauté for about 1 minute until fragrant.
