- Cucumber - 1 small, julienned
- Green beans - 100 grams, trimmed and cut into 3 cm pieces
- Fresh cilantro - 20 grams, chopped
- Lime - 1, juiced
- Soy sauce - 2 tablespoons
- Maple syrup - 1 tablespoon
- Garlic - 2 cloves, minced
- Red chili - 1 small, finely chopped (adjust to taste)
- Peanuts - 30 grams, crushed
- Sesame oil - 1 tablespoon
Steps
- Cook the rice noodles according to package instructions, then rinse under cold water and set aside.
- In a large mixing bowl, combine the shredded green papaya, julienned carrot, halved cherry tomatoes, julienned cucumber, and chopped green beans.
- In a separate bowl, whisk together the lime juice, soy sauce, maple syrup, minced garlic, and chopped red chili to make the dressing.
- Pour the dressing over the vegetable mixture and toss well to combine.
- Add the cooked rice noodles to the vegetable mixture and gently toss until everything is well mixed.
