Ingredients

  • Rice noodles - 200 grams
  • Green papaya - 150 grams, shredded
  • Carrot - 1 medium, julienned
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 small, julienned
  • Green beans - 100 grams, trimmed and cut into 3 cm pieces
  • Fresh cilantro - 20 grams, chopped
  • Lime - 1, juiced
  • Soy sauce - 2 tablespoons
  • Maple syrup - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Red chili - 1 small, finely chopped (adjust to taste)
  • Peanuts - 30 grams, crushed
  • Sesame oil - 1 tablespoon

Steps

  1. Cook the rice noodles according to package instructions, then rinse under cold water and set aside.
  2. In a large mixing bowl, combine the shredded green papaya, julienned carrot, halved cherry tomatoes, julienned cucumber, and chopped green beans.
  3. In a separate bowl, whisk together the lime juice, soy sauce, maple syrup, minced garlic, and chopped red chili to make the dressing.
  4. Pour the dressing over the vegetable mixture and toss well to combine.
  5. Add the cooked rice noodles to the vegetable mixture and gently toss until everything is well mixed.
  6. Drizzle the sesame oil over the noodles and mix again.
  7. Serve in bowls, garnished with chopped cilantro and crushed peanuts on top.
