  • Garlic - 2 cloves, minced
  • Thai bird chilies - 2, finely chopped
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Palm sugar - 1 tablespoon, grated
  • Roasted peanuts - 30 grams, crushed
  • Fresh cilantro - 10 grams, roughly chopped

Steps

  1. In a large mixing bowl, combine the shredded green papaya, halved cherry tomatoes, and cut green beans.
  2. In a separate bowl, mix the minced garlic, chopped chilies, lime juice, fish sauce, and grated palm sugar until well combined.
  3. Pour the dressing over the salad ingredients and toss gently to combine, ensuring the papaya and veggies are well coated.
  4. Sprinkle the crushed roasted peanuts and chopped cilantro on top and give the salad a final toss.
  5. Serve immediately, garnished with extra peanuts and cilantro if desired.
