Ingredients

  • Lime juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Brown sugar - 1 teaspoon
  • Cucumber - 1 small, thinly sliced
  • Cherry tomatoes - 100 grams, halved
  • Carrot - 1 medium, julienned
  • Green beans - 50 grams, cut into 2 cm pieces
  • Cilantro - 2 tablespoons, chopped
  • Lettuce leaves - 2 large
  • Burger buns - 2
  • Peanuts - 2 tablespoons, crushed
  • Chili flakes - to taste

Steps

  1. In a bowl, combine the chicken breast, Thai red curry paste, fish sauce, lime juice, minced garlic, and brown sugar. Mix well and let marinate for at least 15 minutes.
  2. While the chicken is marinating, prepare the Som Tum salad by combining cucumber, cherry tomatoes, carrot, green beans, cilantro, and crushed peanuts in a separate bowl. Add lime juice, fish sauce, and chili flakes to taste, then mix well.
  3. Heat a grill or skillet over medium heat. Cook the marinated chicken for about 5-7 minutes on each side or until fully cooked and golden brown.
  4. Toast the burger buns lightly on the grill or in a toaster.
  5. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the grilled chicken patty and a generous amount of the Som Tum salad on top. Cover with the top half of the bun.
