Ingredients
- Green papaya - 200 grams, shredded
- Carrot - 50 grams, shredded
- Cherry tomatoes - 100 grams, halved
- Green beans - 50 grams, cut into 2 cm pieces
- Cilantro - 2 tablespoons, chopped
- Lime juice - 2 tablespoons
- Soy sauce - 1 tablespoon
- Agave syrup - 1 teaspoon
- Garlic - 1 clove, minced
- Chili flakes - 1 teaspoon (adjust to taste)
- Chickpea flour - 50 grams
- Olive oil - 1 tablespoon (for frying)
- Burger buns - 2 pieces
- Lettuce leaves - 2 pieces
- Cucumber - 50 grams, sliced
- Peanut sauce - 2 tablespoons (optional, for serving)
Steps
- In a large bowl, combine the shredded green papaya, shredded carrot, halved cherry tomatoes, cut green beans, and chopped cilantro.
- In a small bowl, whisk together lime juice, soy sauce, agave syrup, minced garlic, and chili flakes to create the dressing.
- Pour the dressing over the vegetable mixture and toss well to combine. Let it sit for about 10 minutes to marinate.
- Add the chickpea flour to the marinated vegetable mixture and mix until it forms a sticky batter.
- Heat the olive oil in a non-stick skillet over medium heat. Form the mixture into two patties and fry for about 4-5 minutes on each side, until golden brown.
- Toast the burger buns in the skillet for 1-2 minutes until warm.
- Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the patty, cucumber slices, and a drizzle of peanut sauce if using. Top with the other half of the bun.
- Serve immediately with extra lime wedges on the side.
