  • Olive oil - 1 tablespoon (for frying)
  • Burger buns - 2 pieces
  • Lettuce leaves - 2 pieces
  • Cucumber - 50 grams, sliced
  • Peanut sauce - 2 tablespoons (optional, for serving)

Steps

  1. In a large bowl, combine the shredded green papaya, shredded carrot, halved cherry tomatoes, cut green beans, and chopped cilantro.
  2. In a small bowl, whisk together lime juice, soy sauce, agave syrup, minced garlic, and chili flakes to create the dressing.
  3. Pour the dressing over the vegetable mixture and toss well to combine. Let it sit for about 10 minutes to marinate.
  4. Add the chickpea flour to the marinated vegetable mixture and mix until it forms a sticky batter.
  5. Heat the olive oil in a non-stick skillet over medium heat. Form the mixture into two patties and fry for about 4-5 minutes on each side, until golden brown.
  6. Toast the burger buns in the skillet for 1-2 minutes until warm.
  7. Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the patty, cucumber slices, and a drizzle of peanut sauce if using. Top with the other half of the bun.
  8. Serve immediately with extra lime wedges on the side.
