  • Lime juice - 1 tablespoon
  • Carrot, julienned - 1 medium
  • Bell pepper, thinly sliced - 1/2 medium
  • Green onions, chopped - 2 stalks
  • Cilantro, chopped - 1/4 cup
  • Sesame seeds - 1 tablespoon

Steps

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. In a large skillet, heat the sesame oil over medium heat. Add the grated ginger and minced garlic, sauté for 1-2 minutes until fragrant.
  3. Stir in the soy sauce, honey, and lime juice, cooking for another minute until well combined.
  4. Add the cooked noodles to the skillet, tossing to coat them in the sauce.
  5. Add the julienned carrot and sliced bell pepper, cooking for an additional 2-3 minutes until the vegetables are tender but still crisp.
  6. Remove from heat and stir in the chopped green onions and cilantro.
