Ingredients

  • Pork tenderloin - 300 grams
  • Coconut aminos - 3 tablespoons
  • Coconut milk - 4 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 tablespoon, grated
  • Turmeric powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Lime - 1, juiced
  • Skewers - 4-6 (soaked in water for 30 minutes if wooden)

Steps

  1. Cut the pork tenderloin into thin strips, about 2 cm wide and 5 cm long.
  2. In a mixing bowl, combine coconut aminos, coconut milk, minced garlic, grated ginger, turmeric, cumin, coriander, black pepper, salt, and lime juice to create the marinade.
  3. Add the pork strips to the marinade, making sure they are well coated. Cover and refrigerate for at least 15-20 minutes to allow the flavors to meld.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Thread the marinated pork strips onto the skewers, leaving a little space between each piece.
  6. Place the skewers on the grill and cook for 4-5 minutes on each side, or until the pork is cooked through and has nice grill marks.
  7. Remove from the grill and let rest for a couple of minutes before serving.
