Ingredients
- Pork tenderloin - 300 grams
- Coconut aminos - 3 tablespoons
- Coconut milk - 4 tablespoons
- Garlic - 2 cloves, minced
- Fresh ginger - 1 tablespoon, grated
- Turmeric powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Lime - 1, juiced
- Skewers - 4-6 (soaked in water for 30 minutes if wooden)
Steps
- Cut the pork tenderloin into thin strips, about 2 cm wide and 5 cm long.
- In a mixing bowl, combine coconut aminos, coconut milk, minced garlic, grated ginger, turmeric, cumin, coriander, black pepper, salt, and lime juice to create the marinade.
- Add the pork strips to the marinade, making sure they are well coated. Cover and refrigerate for at least 15-20 minutes to allow the flavors to meld.
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated pork strips onto the skewers, leaving a little space between each piece.
- Place the skewers on the grill and cook for 4-5 minutes on each side, or until the pork is cooked through and has nice grill marks.
- Remove from the grill and let rest for a couple of minutes before serving.
