- Chicken breast - 250 grams, cubed
- Soy sauce (Kosher) - 2 tablespoons
- Coconut milk - 3 tablespoons
- Brown sugar - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Lime juice - 1 tablespoon
- Cilantro - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Skewers - 4 (soaked in water for 30 minutes if wooden)
Steps
- In a bowl, combine soy sauce, coconut milk, brown sugar, minced garlic, grated ginger, lime juice, cilantro, salt, and black pepper to create the marinade.
- Add the cubed chicken breast to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 15 minutes.
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
