Ingredients

  • Chicken breast - 250 grams, cubed
  • Soy sauce (Kosher) - 2 tablespoons
  • Coconut milk - 3 tablespoons
  • Brown sugar - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Lime juice - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Skewers - 4 (soaked in water for 30 minutes if wooden)

Steps

  1. In a bowl, combine soy sauce, coconut milk, brown sugar, minced garlic, grated ginger, lime juice, cilantro, salt, and black pepper to create the marinade.
  2. Add the cubed chicken breast to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 15 minutes.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
