- Lime juice (for sauce) - 1 tablespoon
- Chili flakes (optional) - 1/4 teaspoon
Steps
- In a large bowl, combine soy sauce, coconut milk, brown sugar, lemon juice, minced garlic, curry powder, ground coriander, and salt to create the marinade.
- Add chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
- While the chicken is marinating, prepare the peanut sauce by mixing peanut butter, coconut milk, soy sauce, lime juice, and chili flakes in a small bowl until smooth.
- Preheat a grill or grill pan over medium heat.
- Thread the marinated chicken cubes onto the soaked wooden skewers.
