  • Wooden skewers - 4, soaked in water for 30 minutes
  • Peanut butter - 2 tablespoons
  • Coconut milk (for sauce) - 2 tablespoons
  • Soy sauce (for sauce) - 1 tablespoon
  • Lime juice (for sauce) - 1 tablespoon
  • Chili flakes (optional) - 1/4 teaspoon

Steps

  1. In a large bowl, combine soy sauce, coconut milk, brown sugar, lemon juice, minced garlic, curry powder, ground coriander, and salt to create the marinade.
  2. Add chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
  3. While the chicken is marinating, prepare the peanut sauce by mixing peanut butter, coconut milk, soy sauce, lime juice, and chili flakes in a small bowl until smooth.
  4. Preheat a grill or grill pan over medium heat.
  5. Thread the marinated chicken cubes onto the soaked wooden skewers.
  6. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
